Cinco de Mayo Bread Recipes You’ll Love

Over the next few months I’ll be sharing favorite recipes that showcase these brands and show that you don’t need to eliminate bread to eat well. Bread isn’t limited to sandwiches — it can be tortillas, wraps, muffins and more. In our busy household of six we often go through a loaf in a day or two, and we love finding simple, family-friendly ways to enjoy bread at every meal. It’s all about balance and variety and discovering what everyone enjoys.

To celebrate Cinco de Mayo, I’m sharing three easy, crowd-pleasing recipes that are fast to make, versatile and perfect for feeding a group.

1 – Chicken Chipotle Tortillas
1 dried chipotle pepper (remove the seeds)
1/4 cup fresh parsley
1/4 cup fresh cilantro
2 cloves garlic, peeled
1 colored pepper, cut and chopped
salt & pepper to taste
4 boneless, skinless chicken breasts, about 4 to 6 ounces each
1/4 cup shredded cheese
Mayonnaise to spread on tortillas

To assemble, rehydrate the dried chipotle in hot water if needed, then mix it with parsley, cilantro, garlic, chopped pepper, and a pinch of salt and pepper. Add shredded or chopped cooked chicken and toss to combine — add a splash of olive oil if the mixture feels dry. Spread a thin layer of mayonnaise on a Casa Mendosa tortilla, add the chicken chipotle mixture, sprinkle with shredded cheese, roll and serve. These roll-up tortillas are great warm or at room temperature and pair well with a squeeze of lime or a simple pico de gallo.

2 – Lime Chicken Tacos

  • 1 whole rotisserie chicken (no cooking needed)
  • 1 cup salsa verde
  • 1 cup pico or red salsa
  • 1/3 cup agave nectar
  • 1/4 cup fresh lime juice
  • 1/2 cup reduced-fat sour cream
  • Casa Mendosa tortillas
  • Fresh diced avocados, radishes, bell peppers, onions and cilantro
  • Shredded cheese

Shred the rotisserie chicken and combine it with salsa verde, red salsa or pico, agave nectar, lime juice and sour cream to create a bright, saucy filling. Warm the Casa Mendosa tortillas briefly in a skillet or microwave, then fill with the lime chicken mixture. Top with diced avocado, radishes, bell pepper, onion, cilantro and shredded cheese for texture and color. These tacos are fast to assemble, easy to customize, and ideal for feeding kids and adults alike. For a vegetarian option, swap in grilled vegetables or beans.

3 – Avocado Black Bean Wrap

This wrap is incredibly simple, healthy and satisfying — perfect for a quick lunch or light dinner.

  • 1–2 cans black beans (rinse & drain); use one can for two people
  • 1 lime, juiced
  • 3–4 wraps
  • 1–2 avocados, peeled, pitted and gently mashed

Drain and rinse the black beans, then mash lightly or leave them whole depending on your texture preference. Stir in lime juice and a pinch of salt; you can add a dash of cumin or chili powder if you like. Spread mashed avocado on the tortilla, add the black beans, then top with fresh vegetables such as diced tomato, corn, shredded lettuce or chopped cilantro. Roll the wrap tightly and slice in half. These wraps hold well for a short time and make excellent packed lunches.

All three recipes are flexible — swap ingredients to suit allergies, preferences or what’s in your pantry. Warm tortillas briefly before assembling to make them more pliable, toast wraps in a pan for a crisp finish, or serve fillings family-style so everyone can build their own.
