Ingredients

Dumpling Mixture

  • 2 tsp chili oil (optional)
  • 1 tsp sesame oil
  • 1/2 tsp granulated sugar
  • Juice of 1/2 lime (or about 1 tsp lime juice)

Toppings

  • Fresh coleslaw (cabbage and carrot)
  • Thinly sliced cucumber
  • Cilantro
  • Green onions or chives

Instructions

Sauce

  1. In a medium bowl, whisk together the soy sauce, rice vinegar, chili oil (if using), sesame oil, sugar, and lime juice until the sugar dissolves. Taste and adjust seasoning to your preference. Set the sauce aside to let the flavors meld while you prepare the rest.

Dumpling Mixture

  1. In a large mixing bowl, combine the ground pork, grated ginger, minced garlic, sliced green onions, soy sauce, sesame oil, salt, and black pepper. Mix until just combined—avoid overworking the meat to keep the texture tender.
  2. Press the mixture into the bowl and divide it into four equal portions. Shape each portion lightly so it spreads evenly when placed on a tortilla.

Building the Tacos

  1. Lay the four flour tortillas on a clean work surface. Place one portion of the pork mixture on the center of each tortilla and spread it evenly from edge to edge so it covers the tortilla in a thin layer.
  2. Repeat with remaining portions so you have four prepared tortillas ready to cook.

Making the Smash Tacos

  1. Heat 1 tsp of cooking oil in a large skillet or on a griddle over medium-high heat until shimmering.
  2. Place each tortilla meat-side down on the hot surface. Cook until the pork is fully cooked through and the bottom is golden brown. For safety, ensure pork reaches a safe internal temperature.
  3. Flip the tortilla and cook for about 1 minute more, or until the tortilla is golden and crispy. Remove from the skillet and transfer to a plate.
  4. Top each taco with coleslaw, sliced cucumber, cilantro, and green onions. Drizzle the prepared sauce over the toppings. Fold like a taco and serve immediately. The sauce also works well as a dipping sauce on the side.
