Looking for a comforting side dish that feels like home? Classic choices like broccoli, mac and cheese, and mashed potatoes are always popular, but consider surprising your family with Instant Pot Lima Beans and Ham. This simple pressure cooker recipe transforms humble lima beans into a savory, satisfying dish that pairs perfectly with roasts, grilled meats, or a cozy weeknight meal.
Lima beans often get a bad reputation, especially with picky eaters, because their texture and flavor are different from other legumes. They have a mild, slightly nutty and earthy character when cooked properly. Overcooking can lead to a bitter or mealy texture, so using the right technique is important. The Instant Pot (pressure cooker) is ideal for cooking dried lima beans evenly while retaining flavor and body.

To develop deeply savory notes, I tried several flavor pairings and finally settled on a smoked ham hock. A ham hock is the joint near the pig’s foot and adds a smoky, meaty richness that melds with the beans as they cook. If smoked ham hocks are unavailable, a regular meaty ham bone will still add flavor, though you’ll miss some of the smoky character. Smoked ham hocks are commonly sold at supermarkets or from butcher shops.

Ham hocks bring both flavor and protein to the dish. In Southern cooking they’re often used to season greens and beans, helping balance and enrich ingredients that are otherwise mild or bitter. In the Instant Pot the ham releases fat and collagen that naturally season the lima beans, creating a silky broth and intensely flavored bites.
Most of the ingredients for this recipe are pantry staples: dried lima beans, chicken broth, garlic, onion, bay leaf, water, and a ham bone or hock. Fresh garlic is especially rewarding here — simmered in the broth and ham fat it softens and blends into the beans. If you prefer, jarred minced garlic packed in its juices can also work well and adds a convenient flavor boost.

One essential prep step is to sift the dried lima beans before cooking. Sorting removes small stones, debris, or any damaged beans. After sorting, rinse the beans thoroughly under cold water. I also rinse whole vegetables like onions before using them. Taking these small steps makes a noticeable difference in the final texture and flavor.
Although lima beans are underrated, they are a nutritious choice. They’re a good source of protein, fiber, iron, and other essential nutrients — making them a smart addition to family meals. Combining them with ham adds more protein and a comforting savory profile that appeals to adults and kids alike.
Cooking in the pressure cooker is fast and reliable. Set the Instant Pot to pressure cook for the time indicated in the recipe, let it naturally release briefly, then finish with a quick release. Remove the ham hock, shred the tender meat from the bone, chop it into bite-size pieces, and return it to the pot. A final seasoning of salt and pepper is all you need before serving.

This Instant Pot Lima Beans and Ham recipe is an easy way to put a hearty, nutrient-dense side dish on the table quickly. It works as a main for a meat-and-beans meal or as a comforting side alongside roasted or grilled proteins. Try it for your next family dinner and see how the smoky ham and tender lima beans win over even skeptics.

Method
Ingredients
- 1 meaty ham bone or smoked ham hock
- 1 16 ounce bag dried baby limas
- 1 32 ounce carton chicken broth
- 2 cloves garlic peeled
- 1 bay leaf
- 1 onion peeled but intact
- 4 cups water
Method
-
Sort the dried lima beans to remove any small stones or damaged beans. Rinse them thoroughly under cold running water.
-
Place the beans into the pressure cooker. Add the ham bone or smoked ham hock, chicken broth, peeled garlic cloves, bay leaf, whole peeled onion, and 4 cups of water. Do not fill the cooker more than halfway to prevent excessive foaming.
-
Close the lid and set the valve to sealing. Pressure cook (manual) for 40 minutes. After the cook time, allow a natural release for 10 minutes, then perform a quick release for any remaining pressure.
-
Carefully remove the garlic cloves, bay leaf, onion, and ham bone from the cooker. The ham should be very tender; pull the meat from the bone, chop it into bite-sized pieces, and return the meat to the beans. Stir, taste, and season with salt and pepper as needed.
