Grilled sweet-n-spicy chicken thighs are a simple, flavorful way to turn boneless, skinless chicken thighs into a juicy main dish with the perfect balance of heat and sweetness. Chicken thighs are naturally rich, tender, and forgiving on the grill, which makes them an excellent choice for a quick weeknight dinner or a casual cookout. This recipe uses a bold dry rub for gentle warmth and savory depth, then finishes the chicken with a honey and apple cider vinegar glaze that adds shine, sweetness, and a light tangy finish.
The flavor is not overwhelmingly spicy. The cayenne pepper, chili powder, cumin, garlic powder, onion powder, and chipotle chili powder create a warm background heat rather than a fiery burn. The glaze softens that spice with honey while the vinegar keeps the sweetness from becoming too heavy. The result is grilled chicken that is moist, tender, slightly smoky from the grill, a little spicy, a little sweet, and very satisfying.
Boneless, skinless chicken thighs work especially well because they cook evenly and stay juicy even when exposed to direct heat at the beginning of the grilling process. A quick sear gives the chicken color and grill marks, then indirect heat gently finishes the cooking. Brushing the glaze on near the end helps prevent the honey from burning while still giving the thighs a beautiful, sticky coating.

Any Chicken Will Do
Boneless, skinless chicken thighs are my favorite choice for grilled sweet-n-spicy chicken thighs because they have enough richness to stand up to the spice rub and the sweet glaze. They also remain tender throughout the cooking process, which is one of the biggest advantages of using dark meat on the grill. The rub and glaze can also be used on boneless, skinless chicken breasts, but breasts should be butterflied first so they cook more evenly. Large chicken breasts can easily overcook on the outside before the center is done, and butterflying helps avoid that problem.
This same seasoning and glaze combination can also be used with pork, but it truly shines on chicken thighs. The light char from the grill, the savory rub, and the sweet-tart honey glaze come together in a way that makes each bite full of flavor without requiring a complicated marinade or a long preparation time.
If you enjoy grilled chicken thigh recipes, this style is a great companion to grilled Dijon chicken thighs, honey-rosemary chicken thighs, and smoked chicken thighs cooked low and slow. This version is quicker, making it a reliable choice when you want big grilled flavor in about 30 minutes.

- 1 tablespoon olive oil
For the rub
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- ½ teaspoon cayenne pepper
- ½ teaspoon onion powder
- 1 teaspoon kosher salt
- 1 teaspoon cumin
- ½ teaspoon chipotle chili powder
For the glaze
- ½ cup honey
- 1 tablespoon apple cider vinegar
Instructions
-
Prepare your grill for both direct and indirect cooking.
-
Place the chicken thighs in a large mixing bowl and drizzle them with olive oil.
-
Toss the chicken until each piece is lightly coated with oil.
-
In a small bowl, combine the garlic powder, chili powder, cayenne pepper, onion powder, kosher salt, cumin, and chipotle chili powder.
-
Sprinkle the rub over the chicken, tossing as you go so the seasoning coats the thighs evenly.
-
Grill the chicken over direct heat for 2 to 3 minutes per side, just long enough to create grill marks and add a little color.
-
Move the chicken to indirect heat and continue cooking until the internal temperature reaches 155 F.
-
Warm the honey in a bowl or cup in the microwave for 20 seconds, then stir in the apple cider vinegar.
-
Reserve 2 tablespoons of the glaze for serving.
-
Brush the remaining glaze over the chicken as it finishes cooking. You may not need to use all of the glaze. Continue cooking until the chicken reaches an internal temperature of 165 F.
-
Serve the grilled chicken thighs drizzled with the reserved glaze.
