Broccoli Citrus Salad

Description
Bright and crunchy broccoli with creamy avocado, crispy bacon, tart cherries and pecans, all dressed in a tangy orange vinaigrette made with 100% Florida orange juice. Serve at room temperature or chilled for a refreshing side dish.
Ingredients
- 6 thick slices bacon
- 4 cups broccoli florets (about 2 ounces)
- ½ cup diced avocado (1 medium)
- ¾ cup diced red onion
- ¼ cup dried tart cherries or raisins
- ¼ cup roughly chopped pecans
- For the dressing
- 1/3 cup mayonnaise
- 1/3 cup 100% Florida orange juice
- 1 ½ tablespoons honey
- 1 ½ tablespoons Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper and arrange bacon slices in a single layer. Bake about 25 minutes until crispy. Drain on paper towels, let cool, then roughly chop.
- In a large bowl, combine broccoli, avocado, red onion and dried cherries.
- Whisk together the mayonnaise, Florida orange juice, honey and Dijon mustard in a small bowl. Season with salt and pepper to taste.
- Pour the dressing over the broccoli mixture and toss gently to coat.
- Top with chopped bacon and pecans. Serve at room temperature or slightly chilled.
