Easy Taco Salad with Homemade Ranch Dressing
Tacos and salads are both easy favorites, so bringing them together in one fresh, flavorful taco salad makes perfect sense. This recipe has everything people love about tacos: seasoned beef, crisp lettuce, creamy avocado, juicy tomatoes, shredded cheese, and a smooth ranch-style dressing. It is hearty enough for dinner, simple enough for a weeknight meal, and colorful enough to serve when you want something that looks as good as it tastes.
Traditional tacos are delicious, but taco shells made with flour or added fats are not always the best choice when you want a fresher meal. A taco salad gives you the same bold flavors without needing the shell. The crisp baby romaine creates a refreshing base, while the seasoned ground beef adds warmth and richness. Once everything is layered together, you still get the satisfying contrast of textures that makes tacos so enjoyable.

One of the best things about a taco salad bowl is the way each ingredient plays a role. The lettuce is cool and crisp, the beef is savory and warmly spiced, the tomatoes add brightness, and the avocado brings a creamy texture. The shredded jack cheese finishes the bowl with a mild, melty flavor that works beautifully with the homemade taco seasoning.
A good dressing makes this easy taco salad even better. Instead of using a bottled dressing, this recipe uses a simple homemade ranch sauce made with Greek yogurt, almond milk, apple cider vinegar, dill, garlic powder, coconut sugar, and salt. It is tangy, creamy, and quick to whisk together. Drizzle it over the top for a pretty presentation, or toss the salad gently so every bite is coated with dressing.
Making your own seasoning blends and dressings is a simple way to add fresh flavor while keeping the ingredient list easy to understand. The taco seasoning in this recipe uses pantry spices like paprika, chili powder, onion powder, and kosher salt. It seasons the beef well without requiring a store-bought packet. The result is a clean, balanced taco salad recipe that tastes homemade from start to finish.
This healthy taco salad is also easy to customize using the ingredients you already enjoy. You can serve it in wide bowls, arrange it on plates, or make a large salad platter for sharing. For the best texture, assemble the salad shortly before serving so the romaine stays crisp and the avocado looks fresh. If preparing ahead, keep the dressing separate until mealtime.

INGREDIENTS
- 1 tbsp. olive oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 lb. lean ground beef
- 1/2 tsp. plus 1/4 tsp. kosher salt, divided
- 1/2 tsp. paprika
- 1/2 tsp. chili powder
- 1/2 tsp. onion powder
- 1/2 cup Greek yogurt
- 1/4 cup almond milk
- 1 tbsp. apple cider vinegar
- 1/4 tsp. dried dill weed
- 1/4 tsp. garlic powder
- 1/4 tsp. coconut sugar
- 10 oz. baby romaine lettuce
- 1/2 cup jack cheese, shredded
- 2 avocados, sliced
- 1/2 pint grape tomatoes, sliced in half
DIRECTIONS
- Heat the olive oil in a skillet over medium-high heat. Add the diced onion and cook until it begins to soften and sweat, about 3 to 5 minutes. Stir in the minced garlic and cook for another minute, just until fragrant.
- Add the lean ground beef to the skillet. Cook, breaking it apart and stirring often, until the beef is fully browned, about 6 to 8 minutes.
- Season the beef with 1/2 tsp. kosher salt, paprika, chili powder, and onion powder. Stir well so the spices coat the meat evenly. Remove from the heat when the beef is cooked through and well seasoned.
- To make the ranch dressing, whisk together the Greek yogurt, almond milk, apple cider vinegar, dried dill weed, garlic powder, coconut sugar, and the remaining 1/4 tsp. kosher salt until smooth. Set aside until ready to serve.
- To assemble the taco salad, place the baby romaine lettuce in a bowl or on a plate. Add a generous portion of the seasoned ground beef mixture on top.
- Finish the salad with the halved grape tomatoes, sliced avocados, and shredded jack cheese.
- Drizzle the homemade ranch dressing over the taco salad and serve immediately.
