Ingredients

  • Keto chili (use your favorite low-carb chili)
  • Shredded or grated cheese for melting

  1. Prepare the fathead dough according to the fathead dough recipe below. You can also use pre-made low-carb buns or omit the bun for a bunless version.
  2. Pinch off a handful of dough and roll it into a mini loaf roughly the size of a hot dog bun.
  3. Line a baking sheet with parchment paper, place the mini loaves on the sheet, and bake until lightly golden, about 10 minutes. Remove from the oven and let them cool.
  4. Cook the hot dogs on the stovetop, grill, or in the microwave until heated through.
  5. When the fathead buns are cool enough to handle, slice a slit down the middle to create a pocket.

  4. When the mixture is cool enough to handle, knead it with your hands until it forms a smooth dough. If it’s too sticky, let it rest a minute; the coconut flour will absorb moisture.
  5. Divide the dough into portions and shape each into a mini loaf sized for a hot dog bun.
  6. Place the loaves on a parchment-lined cookie sheet and bake for about 10 minutes, or until lightly golden. Remove and allow to cool slightly before slicing.
