You may know aguas frescas made from fruits like watermelon or cantaloupe, but cucumbers make an excellent base too. This Cucumber Lime Agua Fresca—agua de pepino—is subtly sweet, slightly tart, and wonderfully cooling. It requires only four ingredients and a few minutes to prepare.
I find this to be one of the simplest aguas frescas to make. Cucumbers are often on hand, so although it’s a perfect summer beverage, we enjoy it year‑round. Compared with many store-bought drinks and sodas, agua de pepino is a more nutritious, hydrating choice.
What is an Agua Fresca?
Agua fresca literally means “fresh water” in Spanish and refers to a lightly sweetened blended drink. Aguas frescas are made by blending fresh fruit, grains, flowers, rice, or seeds with water and a sweetener to create a refreshing juice-style beverage. These drinks are extremely popular in Mexico and are commonly sold in markets, restaurants, and by street vendors.
A nice thing about aguas frescas is their flexibility: you can adjust the sweetness and ingredient proportions to taste. Traditional recipes often use cane sugar, but alternatives like agave syrup, monk fruit, honey, maple syrup, or date syrup also work. Keep in mind that some sweeteners (honey, maple, date syrup) will subtly change the flavor.
The Ingredients

To make agua de pepino you need:
Cucumbers
Use regular slicing cucumbers, English cucumbers, or Persian cucumbers. I usually leave some peel for color and added fiber; partially peeling can reduce any bitter skin without losing nutrients.
Limes
Fresh lime juice adds a bright, tart balance to the cucumber flavor. Adjust the amount to suit your taste.
Agave Syrup (or preferred sweetener)
Agave dissolves easily and has a mild flavor, but you can substitute honey, maple syrup, monk fruit, or another sweetener. Add more or less to suit your sweetness preference.
Water
Use cold water to keep the drink refreshing. Sparkling water can also be used for a fizzy variation.
How to Make Cucumber Lime Agua Fresca

This recipe is quick and forgiving. For the proportions I use: combine 6 cups cold water, 2 medium cucumbers (partially peeled if desired), 1/3 cup fresh lime juice, and 1/4 cup agave syrup. Blend until smooth and taste; add more sweetener or lime if needed.
If you have a high‑powered blender, you can serve the agua fresca without straining. If you prefer a very smooth, pulp‑free drink, pour the blended mixture through a fine mesh strainer into a pitcher to remove solids. Serve chilled or over ice.
Storing Agua De Pepino
This agua fresca is best on the day it’s made, but it will keep in the refrigerator for 2 to 3 days when stored in a tightly sealed jar or bottle. Expect some settling of the pulp—just give the container a quick shake or stir before serving.
Variations
Try these simple ways to change the flavor or texture:
- Chia Seeds: Add 2 tablespoons of chia seeds to the pitcher for extra texture and nutrition; allow them a few minutes to swell.
- Tajin Rim: For a spicy, savory twist, rim the glass with lime juice and Tajín (a chili‑lime‑salt seasoning) or a similar spice blend.
- Mint: Blend in 1/4 cup fresh mint leaves for a cooling, herbal note.
- Sparkling: Substitute some or all of the water with sparkling water for a fizzy version.
